Mexican restaurant Pablo’s Tacos & Burritos is breathing new life into an empty downtown storefront after opening in June.  Pablo’s began as a food truck providing fresh, authentic Mexican food across the Merrimack Valley and gained a legion of loyal customers.

“If you’re looking for good, authentic, fresh street-style Mexican food, this is the place for you,” said Sophia Vargas, cashier and daughter of owner Luis Vargas.
